Today I have officially entered the "ninth month" of pregnancy and am into the home stretch! I can't believe in a month from now (or less...I really hope less) we will complete our family with our third precious baby. I'm getting antsy kid!
Yesterday I mentioned on my social media that a dear friend of mine sent over a full healthy meal for me to freeze for when the baby arrives. Seriously, if you ever want to get a gift for an expecting mom, food is the BEST way to go.
In addition to the meal she also included a little treat, no bake energy bites, and they were a huge hit with everyone! When Daniela kept calling them cookies I knew I had to get the recipe because this was going to be a keeper. These energy bites are a great alternative to store bought granola bars and are packed with healthy fats and whole grain with a touch of natural sweetness from the mini chocolate chips and honey. They are perfect to pack in your child's lunch box for a snack as well.

Here is what you'll need:
- 1 cup rolled oats
- 2/3 cup toasted coconut flakes
- 1/2 unsweetened almond butter
- 1/2 cup flaxseeds
- 1/2 cup mini chocolate chips (I used Enjoy Life Dairy Free Chocolate Chips)
- 1/3 cup honey or maple syrup
- 1 tbsp chia seeds
- 1 tsp vanilla extract
Stir all ingredients in a large bowl until mixed well and place in the refrigerator for 30 minutes. Once chilled, roll into balls about an inch in diameter. Store them in an airtight container and keep them in the fridge.
Recipe yields about 20 energy bites.
