So have you heard that it's National Cookie Day?! Never really knew this was a thing but I'm pregnant and I love cookies, so I decided not to ask any questions and just go with it and share my all time favorite "clean" Double Chocolate Chip Paleo Cookies with you!
I know what you're probably thinking...paleo or "clean" cookies....probably equals gross cardboard "treat" that you would rather do without. Trust me, I've tried several of similar cookie recipes claiming to be great, and they were a bust, so I totally get your hesitation...but these are the real deal, I promise.
Now, just to be clear, while these are a great alternative to your refined sugar, refined flour and butter based cookies, they are still cookies and are a treat...even though they are macro friendly with healthy fats and a some protein, I wouldn't recommend my clients eating five in one sitting (and you probably wouldn't want to because they are so chocolatey and rich).
However, these cookies are a great homemade healthier indulgence that your husband AND kids will like. I even bring them to parties and they are a hit!
So here is what you'll need:
- 1 cup natural unsweetened and unsalted almond butter (thick almond butter works best)
- 1 cup coconut sugar
- 1 egg whisked
- 1/2 cup unsweetened natural cocoa powder
- 1 tsp baking soda
- 1 tsp vanilla extract
- pinch of salt
- 1/3 cup Enjoy Life Mini Chocolate Chips
Preheat your oven to 350 degrees.
In a large bowl mix the almond butter and coconut sugar really well. It is going to be thick so this part takes a little work :). Add in your whisked egg and combine.
Next add your cocoa powder but only 1/4 cup at a time so you can really mix it well. Then add the baking soda, vanilla extract, pinch of salt, and the chocolate chips. Mix it really well (at this point probably easier to ditch your spoon and dive in with your hands...gets messy but its the easiest way). You're doing something right if the dough is really thick and it should look something like this...
Prepare your cookie sheet with parchment paper and spoon 1-2 tbs of dough and form a ball and place on your cookie sheet. Take a fork and press down lightly to flatten the cookies a bit but not too much so they don't break apart when baking. Here they are before they go into the oven...
Bake for 10 minutes. Let cool for 5 minutes and make sure you try one warm because they are SO good.
See...I told you my kids actually really l like these...this cookie helped me out big time to get my son to eat all his dinner :).
